Glycosidase for flavour release in must and wine
The ß‐glycosidase activity of Trenolin® BouquetPLUS can be applied to mash, in must and wine. Due to the sugar tolerant ß‐glycosidase activity, Trenolin® BouquetPLUS can be applied even before alcoholic fermentation to release aroma precursors.
