For the degradation of plant glucans in malt or cereal mash up to 90 °C. Enerzym® Visco hydrolyses as endoenzyme 1.4‐ β‐glycosidic bonds of glucans in oat, barley, wheat and other grains. The main enzyme activity is based on a thermostable β-glucanase (EC 220.127.116.11; EC 18.104.22.168) from Talaromyces emersonii.
