Coloured Fruits and Grapes

Juices from coloured fruits and grapes are often subject to particular requirements with regard to colour. Therefore, a proper processing of these fruits is very important. On the one hand, the mostly expensive raw material should yield sufficient amounts of juice along with a good colour yield, on the other hand, a later juice stability must not be risked by taking excessive extraction measures.
