Beer specialities are an obvious trend in the brewing industry. To provide a special characteristic to the beer, special kinds of yeast are required. Smell and taste are the major properties. For cost-saving and quality-assurance reasons, breweries also use dry pure culture yeast, since they shorten the processes.

Dry pure culture yeasts guarantee the highest quality standards. Process fluctuations caused by yeast are then permanently ruled out. By-products of fermentation, e. g. diacetyl, can also be quickly and reliably decomposed with the help of enzymes.
